Meet Milo

One evening, as the sun set on the plains of Oklahoma, a wild hare and a curious catfish met beneath the towering stalks of milo sorghum. They shared stories of tradition and imagination, inspired by the colors and flavors around them.

Named after heritage milo sorghum, Milo sources ingredients from local producers with a focus on fresh, local flavors—all with a curious culinary twist.

Chef Beth Lyon

A lifelong Oklahoma native, Chef Beth Lyon’s earliest culinary training came from her grandmother, who taught her to can, preserve and cook produce from her Victory Garden. As a teenager, she entered the food service industry by way of Coit’s Root-Beer Drive-In and later as general manager of Irma’s Burger Shack. It’s here that she met Kurt Fleischfresser, James Beard award winner and her future mentor.

Chef Beth went on to be one of only three women to graduate from Fleischfresser’s Coach House Apprenticeship. In her 25-year career, she has worked in celebrated local restaurants including Republic, Kitchen 324, The Press, The Mule, Anchor Down, Provisions Kitchen—in addition to founding her own culinary concept. At Milo, Chef Beth brings a passion for Indigenous-inspired and heritage Oklahoma flavors, with a focus on seasonal and locally sourced ingredients. Her vitality, artistry and eye for nourishment bring a balanced and imaginative dining experience to Milo.
